In the world of everything gluten-free, the constant trial and error of products that may or may not get the translated into a gluten-free option well is frankly exhausting. And, gluten-free eating overall it makes simple pleasures like seasonal products more difficult to easily enjoy. Chances are, the seasonal flavors that everyone’s enjoying aren’t going to be as widely available in your favorite gluten-free products.

That’s why our intrigue was peaked when we saw this pizza from Whole Foods. It is from the brand Caulipower, and this Sweater Weather Pizza described as having a cauliflower pizza crust with a white sauce base, fall squash, a three-cheese blend, shaved brussel sprouts, and chili crisp on it. At long last, we saw an option for a seasonal savory product that would easily accommodate someone gluten-free. But like we mentioned before, it’s all too common for products like this to disappoint or fall short of expectations. So we decided to take that trial process upon ourselves and give you all the full rundown. Here’s our official Sporked review.

Our Official Thoughts

Pros — Cauliflower pizza crusts are so hit and miss, not only in texture but flavor, too. For example, that distinctly chewy bite that you crave from a pizza is something you can generally expect to be completely absent from a gluten-free variety. But that was not the case for this pizza.

Not only did the crust taste good and well seasoned, but the way it’s done actually eats in a very impressive manner texturally. It is certainly more in the style of a “thin and crispy” pizza, but that really works to this pie’s advantage. It is not only crunchy and light, but it is thick enough to actually be substantial and have some chew to it. It’s so well executed that my partner, who tasted the pizza blind, wasn’t able to differentiate the crust from a traditional thin and crispy frozen pizza.

Not only was the crust good, but everything on top of it had great flavor, too. The creaminess of the white sauce base was delightful and didn’t end up being dry as can sometimes happen with cream sauce pizzas. And, the squash and chili crisp added a break in the flavor that definitely differentiated this from more universally appropriate seasonal pizza flavors. It felt autumnal, and we appreciate it. The pizza was also generally not lacking in flavor at all. It was incredibly fragrant and was packed with rich umami flavor. As someone who isn’t gluten-free, I would happily purchase this pizza to enjoy it again.

Cons — While this pizza is very well seasoned, it is lacking a touch of salt. But, as soon as it is hit with a light sprinkling of salt all over the top, it makes all of the flavors really sing together and easily remedies the situation.

And, I suppose our final note here would just be that the chili crisp element isn’t very strong in regards to spiciness. The flavor is there, but if you’re really looking for this to have a good kick to it you might be disappointed. Again though, if you do want it to be more spicy, it is easily tweaked by the addition of crushed red pepper flakes or even some more chili crunch, freshly drizzled on top after baking.
