Every day is a good day for a cookie, really. But what better time to indulge than a Monday after a long holiday weekend? Back to work blues, anyone? Well, in honor of this week’s all-star lineup at Crumbl, we knew we would have to give at least one of the flavors a try.

Since we’re fully in the throes of summer, and the theme at Crumbl this week is “all-time fan favorites,” I chose to try out their Strawberry Ice Cream Bar Cookie to get the best of both worlds. Themed goodness wrapped into a perfectly pink cookie box. Now, let’s see if this flavor was worth bringing back.
Strawberry Ice Cream Bar Cookie Review
Crumbl says that this cookie is made from a base of strawberry and vanilla sugar cookie dough and is topped with whipped white dot buttercream and strawberry and vanilla streusel. It is served chilled and is reminiscent of the ice cream truck snacks of nostalgic dreams.
Pros: Now listen, of the classic retro ice cream bar popsicles, this one has always been my favorite. Something about the contrast of textures and temperatures has always been so satisfying. And the artificial strawberry taste is honestly just addictive. This cookie represented those ice cream bars in every way I think mattered. Of course it’s a cookie, so that luscious ice cream wasn’t there. But, the chilled frosting made up for it. And they got the strawberry flavor exactly right. The streusel on top also earned it some bonus points―it was a perfect throwback to the texture of the exterior of the classic ice cream bars.
Cons: There’s not many negative things I can really say about this cookie… so long as you actually like the source material. Personally, I love the artificial strawberry flavor, but if it’s something that has turned you off from the original ice cream bar in the past, I don’t see that changing with this cookie. Additionally, there is something to be said about how eating a cookie with buttercream on it cold negatively impacts the overall texture. In this case, I understand the choice―and it actually makes me enjoy it more since it’s more like the ice cream I love so much. But in full cookie context, I definitely understand how some people wouldn’t appreciate it.
Final Verdict
Honestly, this is the strongest showing of a Crumbl cookie flavor that I’ve experienced in quite some time. It’s pretty simple in its concept. And, if you’ve been craving those nostalgic flavors of summertime childhood, then I definitely recommend giving this one a try.
