There’s A Viral Ice Cream With Just Two Ingredients, And We’re Sold

I’m not necessarily in the habit of trend-chasing, but I am in the habit of trend-spotting – especially if said trends bring delicious, easy recipes to my doorstep. Thankfully, there have been a few of those floating around the internet recently. TikTok’s viral yogurt pasta and the two-ingredient Trader Joe’s soup have been some standouts this year for a combo of ease and flavor.

You know what I’m really excited by, though? Viral recipes that don’t just make things easier, but those that make things that I’d probably never bother to make in the first place, due to being so put off by the effort. Yogurt pasta may be simple, but it’s not allowing me to leapfrog a level of culinary skill. Watermelon ice cream is a different story.

Watermelon Ice Cream: Too Good To Be True?

A watermelon ice cream recipe has been doing the rounds on social media over the last few weeks, and it’s finally bubbled out of TikTok and Instagram Reels and onto our desk. You need just two ingredients to make it: A watermelon and milk or cream (whole milk and heavy cream are probably your best two bets here, but you can also use coconut milk or your non-dairy alternative of choice – just try to choose something thick and creamy). 

First, you cut your watermelon in half, then scoop out a portion in the middle in a bowl shape. It needs to be ripe; otherwise this recipe won’t work. Cover it in some plastic wrap and freeze it until completely solid, and then pull it out of your freezer, remove the plastic wrap, and pour in your milk or cream. You kinda have to eyeball this, but it’s best to do a little at a time…because then, you mix the two together with a spoon, slightly mashing the watermelon up in the process. As you mix, the melon’s temperature will turn the combination into instant ice cream. Personally, I’ve never braved making ice cream at home – maybe I’m missing out, and it’s easier than I think – but this is my kind of level of competency. 

And Is It Any Good?

According to people who have made it, it is! This watermelon ice cream is creamy, refreshing, and pleasingly sorbet-like – ie., not overly dense and light. The only thing you might want to add is a sweetener, although if your watermelon’s already sweet enough, it might not be necessary. Pair it with an espresso lemonade, and fully lean into the viral vibes.
