The most familiar item in the lineup is the Pumpkin Spice Pancakes. IHOP has brought these pancakes back for previous fall seasons and the chain has described them as pumpkin pancakes made with real pumpkin and seasonal spices, finished with creamy whipped topping.

For anyone who has been waiting for pumpkin pancakes to make their annual comeback, August 24th is the big day.

IHOP Is Turning Pancakes Into Tacos

The most interesting item in the new menu is easily the Pumpkin Cheesecake Pancake Tacos.

IHOP has played around with the pancake taco idea before, turning its pancakes into tacos filled with sweet or savory ingredients. The chain introduced Pancake Tacos nationwide in 2023, with options like the Fresh Strawberry Cheesecake Pancake Taco, Country Chicken and Gravy Pancake Taco, and Caramel Banana Pancake Taco.

Now, the idea is getting a serious fall makeover.

The Pumpkin Cheesecake Pancake Tacos bring together pumpkin spice and cheesecake in a pancake taco style. IHOP’s announcement confirms the new item, although the chain has not shared a full ingredient breakdown yet. Still, the name gives away plenty. There’s the warm pumpkin spice flavor, followed by the rich and creamy taste of cheesecake, all wrapped up in one of IHOP’s pancakes.

It looks like the kind of menu item that could make a regular stack of pancakes feel a little boring.

A Pumpkin Spice Milkshake Is Joining The Party

The Pumpkin Spice Milkshake is the third item arriving with the seasonal lineup on August 24th. This is a fun addition because IHOP has been experimenting with big dessert-inspired flavors in its drinks. In June 2026, the chain launched a Dubai Chocolate Milkshake alongside its viral Dubai Chocolate Pancakes.
