When it comes to salty, succulent breakfast meats, are you team sausage or bacon? Personally, I’m all about breakfast sausage. It has a great juicy bite, an explosion of salty-sweet flavor, and it’s a lot harder to mess up—the chances of getting bacon cooked just how you like it at a diner or deli are about one in 40.

Although a breakfast sausage sandwich or a platter with scrambled eggs and juicy links is my ideal way to start the day, I gave up pork a while back. So, chicken sausage for breakfast (a diamond in the rough for us chicken fans) is always on my radar. That’s why I was over the moon to get a taste of a couple chicken sausage products from Amylu Foods that are now available at Target. Both are made from chicken without antibiotics, nitrates, nitrites, fillers, and preservatives.

Amylu Foods Maple Breakfast Bites

These are essentially breakfast sausage meatballs—let me repeat that: Breakfast. Sausage. Meatballs. Who knew such a wonder existed in the natural world. As soon as I took them out of the package I was exalted. They come wrapped in plastic sleeves (a sleeve of meatballs!) with perforated edges so you can rip off individual servings. Outstanding.

I’ll admit that I didn’t get my first try of the Breakfast Bites in the morning. Instead, I added them to dinner—homemade pesto with gnocchi—to see how they’d fare in a not-breakfast setting, even though I was taking a gamble with the maple flavor. However, the maple sweetness is pretty subtle, and there’s a nice herby pepperiness and a hint of heat that makes them delicious but not overpowering. It worked surprisingly well in a garlic-heavy parsley-basil pesto. Honestly, this is the kind of flavor that can hold its own wherever sausage is applicable, from sandwiches to dinner to a breakfast bowl.

Even though they come refrigerated, I tried some from the freezer, and they were just as delectable. They’re pre-cooked, so I heated mine up in an air fryer and they came out crispy all over in just a few minutes.

Amylu Foods Breakfast Time Patties

For a breakfast sausage, Amylu Food’s Breakfast Time Patties leaned a lot more savory than I anticipated—not in a negative way, but they didn’t have the pop of sugariness that you’d normally expect in breakfast sausage. They had a mild, slightly herbaceous flavor that I imagine would be popular among children with picky palates.

Even though I was hoping for more of a traditional breakfast sausage taste, this perceived weakness ended up being a strength. These patties made a deliciously savory breakfast with scrambled eggs, onions, and sharp, earthy rye bread. But, like the sweeter Breakfast Bites, they could find a home in just about any dish that calls for sausage, be it pasta, pizza, or a hearty sandwich. Still, since they already lean into umami, I would have liked a little bit more of a garlicky bite. The next time I go to town on these patties, I’m going to pair them with an herb-crusted and/or garlic-infused cheese to give them the umami-drenched makeover they deserve.
