Have you seen the new Cookie Bar Cake at Costco? If you follow us, you probably know we haven’t shut up about it since trying it in our latest taste test. I mean, look: It’s not the most amazing thing to come out of Costco Bakery by far. (I still have very fond members of the Costco coffee cake that hit last year.) But it is the latest new Costco dessert to win over the internet, and we have a lot to say about it. Pros: This cake is priced around $20. That’s not cheap, and my biggest question going into this was whether this 2.5 lb cake is worth your money. The answer is yes; it’s worth your money. This thing is a big, beautiful monster, with distinct layers of chocolate cake, mousse with chunks of cookie dough, vanilla cake with chocolate chips, and a thin sheet of chocolate frosting on top that’s drizzled with fudge. (My favorite layer is the cookie dough mousse. It’s soft, creamy, and absolutely egregious.) All together, you might think this would taste too sweet and chocolatey, but nope! The lighter vanilla cake and brightly bitter chocolate cake help pare back the sweetness. (Also, the two small chocolate chip cookies decorating the top make me laugh every time. They look so stupid. I love it.)
Cons: This is the kind of thing you buy once and never again. For health, monetary, and palate-fatigue reasons.
Verdict: Making the most out of life means that all cake-loving Costco shoppers need to try this before it’s gone. Living a long life means limiting yourself to, like, one Costco cookie bar cake a month. That’s doable, right? I know I just said “this is the kind of thing you buy once and never again,” but I’m just being realistic here!
