It’s the beginning of the week again and if you’ve been following along with this series or Crumbl Cookies’ menu changes, then you know Monday means one thing: a brand new cookie lineup. Well, this week is no different.

Here’s the thing―although Crumbl makes these menu changes every single week, they really shook things up in a pretty fundamental way this time. They’re going all in on one type of cookie, and even removed constants from the rotation. So, without further ado, let’s break it all down together.

This Week’s Flavor Lineup

This week, Crumbl decided the entire menu lineup would be comprised of cookie thins. If you’re familiar with Crumbl, you’ll know that their menu generally consists of thicker, more doughy cookies with the occasional thin cookie on the menu. But, this week, it’s top to bottom cookie thins. Each cookie thin ordered comes automatically as a set of two. So, although you’re still getting roughly the same volume of cookie per order, these certainly give the illusion of getting more bang for your buck. Plus, they’re easy to share with loved ones, too!

  • Red Velvet Cookie Thins ― These cookies are pretty simple and play off of the cake flavor we all know and love. The red velvet cookie dough is baked thin with the iconic cream cheese frosting emulated through creamy white chocolate chips mixed into the dough and a white chocolate drizzle on top.
  • Dubai-Style Chocolate Thin Sandwich Cookie ― Instead of serving the cookie thins as two separate entities, this cookie sandwiches them together for one luxurious treat. Two thin chocolate cookies are sandwiched and filled with a pistachio-Kataifi filling. The sandwich is then drizzled with brown and pale green decorate on top so you won’t forget what each mouthful will be rich with.
  • Mallow Thin Sandwich Cookie ― Similarly to the format of the Dubai cookie, this cookie is also sandwiched. But for this cookie it takes a hard visual turn into OREO-land. It may look like an OREO, but its filling is far from its plain-ness. Two chocolate cookie thins sandwich a marshmallow mousse that is rippled with brownie pieces and cookies and cream chunks. Think of an OREO, but more luxe than ever and made with rich buttery cookie thins instead.
  • Cookie Butter Cookie Thins ft. Biscoff® ― These cookie thins are back to the “set of two” format and aren’t sandwiched with anything. But the cookies still sound perfectly delicious to me. The dough is make with Biscoff cookie butter and the cookie dough is rolled in broken-up pieces of Biscoff cookies before baking. If you’re a fan of the classic cookies, then these are their more luscious and buttery counterpart.
  • Cake Batter Cookie Thins ― Don’t love red velvet cake? Not a problem! There’s still a chance for you to indulge your cake x cookie fantasies with these cake batter cookie thins. This time, the plain cake batter cookie dough is simply rolled in festive rainbow sprinkles and baked thin for a nice change of pace from Crumbl’s usual style.
  • Strawberry Cookie Thins ― These cookies might be the most simple on the list, but they sound like they may be the most delicious. It’s just a strawberry cookie dough, baked thin, and dusted with a sprinkling of freeze-dried strawberry pieces and powdered sugar for a delicate finish.
  • M&M’s® MINIS Cookie Thins ― There’s something so nostalgic about a cookie made with M&M’s. Mini M&M’s are even better. These cookie thins are crisp around the edges, chewy in the center, and loaded with M&M’s MINIS for a fun texture and color experience.
  • Pink Sugar Cookie Thins ― Here’s where the menu gets funky. Sure, the flavors change at Crumbl every week. But, the Pink Sugar Cookie, S’mores Cookie, Chocolate Chip Cookie, and the Brownie Batter Cookie remain time and time again. But, for this week, only even the classics are being thinned out. The two thin vanilla sugar cookies are served chilled with a thin spread of pale pink almond buttercream on top.
  • S’mores Cookie Thins ― This is one flavor of Crumbl’s cookie thins that fans should be familiar with by now. Just this summer, we’ve seen them on the menu twice already. Crispy graham cookie dough is baked with a marshmallow center. They’re topped with a milk chocolate drizzle to really round out that classic s’mores flavor.
  • Brownie Batter Cookie Thins ― These two thin chocolate cookies are baked with a brownie batter center and semi-sweet chocolate chips. They maximize on the crisp-to-chewy ratio thank to the brownie batter baked in making these a very exciting “thin” to see on the menu.
  • Chocolate Chip Cookie Thins ― You know it, you love it, and now it’s thinner. If you’re a fan of a Tate’s-style chocolate chip cookie, then Crumbl’s got just the cookie for you this week. It’s still all the same classic flavor, just with a fun format change.
