I’m burying the lead here, but if you love TJ’s dessert aisle and haven’t tried Trader Joe’s new sheet cake yet, you’re missing out!
POV: It’s 7:30pm on a Thursday night. Your friends are getting together to watch the Traitor’s season finale. You aren’t hosting, but you still have to bring something other than yourself, as common courtesy dictates! You’re scrambling, even eyeing that opened bottle of wine from last week in your fridge as an option. (C’mon, girl. Have some class.) You’re supposed to be there, uh *checks watch*, right now, but you’re just leaving your house. What do you do?
Go! To! Trader! Joe’s!
Did this happen to me? Yes. Last night, in fact. And if you find yourself in a similar scenario, the new Toasted Coconut Mini Sheet Cake is here to help you. I promise. Here’s what I have to say about it:

Pros: If you’re thinking, “She must love this because she loves coconut…” you’re wrong. Besides the occasional Pina Colada, I am not a coconut fan and never will be. That. Being. Said. With a moist coconut buttermilk cake and coconut cream cheese frosting, Trader Joe’s new sheet cake is so delightful for a coconut dessert. It gets the balance of flavor just right, with the coconut mainly coming through in the tender, chewy flakes mixed into both parts of the cake. It’s very toasty and comforting—not at all too sweet or too coconut-forward, which is why it’s a crowdpleaser. (I saw a comment on Reddit recommending adding some smooshed pineapple to it, and I absolutely co-sign that.)
Cons: I do think they could have gone a little lighter on the cream cheese frosting (it’s thick), but that’s a personal preference.
Verdict: Look, have they made better sheet cakes? Yeah. TJ’s vanilla sheet cake alone is pretty perfect. But this is a great addition to an iconic Trader Joe’s line-up, and it saved my life, so. There’s that.
