What Is Gluten Free Bread, Really?

Being gluten free was very trendy a few years ago, and then it became very trendy to make fun of this idea as the epitome of diet restriction: “Is your water gluten-free?” etc., etc. But here’s the truth: A lot of people have Celiac disease and cutting out gluten can make them feel a lot better. Even if you aren’t Celiac, people have reported benefits to getting gluten out of their system. So, let’s lay off the gluten jokes, shall we?

If you are choosing to say goodbye to gluten, there’s one big question: What about bread? Bread is chock full of the stuff. And yet, there is such a thing as gluten free bread. What is gluten free bread? How is it made? Let’s get the facts we knead to know.

What is gluten free bread?

Typically, bread is made from wheat, rye, or barley, all of which are chock full of gluten. Gluten free bread, on the other hand, is made from grains that do not contain gluten such as rice flour. Usually, hydrocolloids such as guar gum are used to help improve the texture of gluten free bread and give it more of a bread-y feel.

How is gluten free bread made?

Gluten free bread is made in much the same way as gluten-rich bread, just without the gluten-y ingredients. Mamaknowsglutenfree.com has a simple recipe that calls for gluten-free all-purpose flour, baking powder, instant yeast, honey, olive oil, apple cider vinegar, water, egg whites (okay, that’s different from your usual bread recipe), and salt. Generally speaking, you mix all the ingredients together to make a dough, let it rise, and then bake it.

What is gluten free bread made out of?

Gluten-free bread uses a gluten-free grain in place of wheat, rye, or barley. Oftentimes, rice flour or potato flour will be used in its place. There will also usually be a texture-enhancer such as guar or xanthum gum.

Is gluten free bread keto? Is gluten free bread low carb?

Despite the lack of gluten, this type of bread is typically still high in carbs, meaning that those following a keto diet should skip it. There are, however, breads made with almond flour that may be a better fit for those on keto.

Why is gluten free bread so small?

Gluten free bread tends not to rise quite as much as regular bread, which contributes to its smaller size. The ingredients tend to be a bit denser as well, which is another reason for its diminutive size.

Does gluten free bread have yeast?

It certainly can! Yeast is not inherently gluten-y, so you can make gluten free bread that still has yeast in it. However, there are bread alternatives that also do not use yeast, so if that is of concern, be sure to check the label.

  • A gluten free diet is the only treatment for Coeliac Disease. It is an autoimmune condition and strict adherence to living gluten free is my only option. It not only affects the stomach but skin conditions, ataxia and neurological problems. It is a serious health condition.
