Is it just us, or is butterbeer absolutely everywhere at the moment? In fact, don’t answer that: We know it’s not just us. Butterbeer-flavored snacks were big last year, and the Harry Potter-inspired combination of butterscotch, caramel, and creaminess hasn’t gone away in 2026. We’ve seen it in coffee creamer. We’ve seen it at Disney. We’ve seen it at Cinnabon. It’s relentless!

Where we haven’t seen it, though, is on Rice Krispies Treats. But now, thanks to a new recipe from McCormick, it’s kinda all we can think about. Ready for a new spin on your favorite dessert?
Rice Krispies + Finishing Sugar = Success
We spied this recipe on the McCormick website, and butterbeer fans are gonna want to bookmark this one. The recipe is simple, provided that you already have the McCormick Harry Potter Finishing Sugar that you need to actually execute it. All you do is whip up a batch of Rice Krispies Treats as you normally would, combining melted butter and mini marshmallows with the breakfast cereal. Then, you add in five teaspoons of the finishing sugar, stirring it through to ensure that all of the flavors are well-incorporated. A touch of salt adds some balance to all of the sugariness going on – and believe us, there’s a lot of that.
Once this is all done, you don’t even have to bake anything: Just press it into a pan and allow it to set. McCormick recommends sprinkling the treats with a touch more finishing sugar, if you want, before serving. Hey, look: It’s called finishing sugar. You finish desserts with it. It’s only right.
Do I Have To Stop At Butterbeer?
No, my friend, you do not have to stop at butterbeer. McCormick has several other recipes for what it calls “Crispy Treats” on its website, made with its other finishing sugars. If butterscotch and caramel aren’t your thing, you can whip up a batch of its chocolate hazelnut flavored treats with its Chocolate Hazelnut Finishing Sugar. The McCormick range also has a bunch of other finishing sugars, including Mixed Berry, Apple Pie, Cinnamon Roll, and Blueberry and Lemon options, all of which we think would work very well in one of these desserts.
And you know what? You don’t even have to have this butterbeer finishing sugar to make your own version of this recipe. Whip up a batch of Rice Krispies Treats, and add in a touch of butterscotch syrup, some caramel extract, and a little extra butter. It may not exactly emulate the flavor, but it’ll be pretty darn close.
