The New Pollo Asado Has A Fresh Recipe
The new Pollo Asado starts with Adobo chicken that is grilled and seasoned with garlic and Mexican spices, and then mixed with hand-cut cilantro. Chipotle finishes the chicken with citrus and real lime to give it a bright, fresh flavor.
So you have a savory, smoky flavor with plenty of fresh citrus flavor mixed in.
This recipe is different from the Pollo Asado that Chipotle introduced in 2022. The original version used a spice blend before the chicken was grilled, chopped by hand, and finished with fresh lime and cilantro. So, anyone who remembers the first Pollo Asado shouldn’t expect an exact repeat.
It Can Go In A Burrito, Bowl, Or Tacos
For the uninitiated, the new Pollo Asado can be ordered anywhere Chipotle’s regular proteins can go. So it can become the main item in your burrito bowl with rice, beans, salsa, cheese, and guacamole. It can also be tucked into tacos, wrapped inside a burrito, or added to a salad.
The citrus and lime seasoning should also pair nicely with Chipotle’s fresh salsas and guacamole. Anyone who likes a little brightness with grilled chicken has plenty of options for building an order around it.
Chipotle is bringing back Pollo Asado because it knows fans love it. In fact, Pollo Asado originally became the company’s first new chicken menu innovation in nearly three decades when it launched in 2022. And during its testing period, it sold just as well as Smoked Brisket, which was Chipotle’s bestselling item at the time.
