Move over, America. Costco is the new land of opportunity. The opportunity to fill every inch of your house with food that’ll last you a lifetime. And that goes for everyone! Even though Costco is known for its hot dog combos and rotisserie chickens, there’s still plenty for all my meat avoidant friends to eat. You can buy rice by the sack and enough cheese to make the lactose intolerant quake when they enter your home. Here are the best vegetarian dinner ideas at Costco to keep in mind for your next trip.

It’s hard to beat the convenience of a meal packed into a single box. Costco’s known for its many meal kits and this one just happens to work perfectly on a list of the best vegetarian dinner ideas. This Thai curry comes filled to the brim with herbs, spices, fresh and dried chilis, and veggies. Plop the curry onto a bed of jasmine rice that conveniently comes with it, heat it all up, and enjoy it as a hearty lunch—or cook up some Bibigo vegetable spring rolls to go with for a more filling vegetarian dinner.

Craving Indian instead of Thai? Don’t you worry, Costco’s got you covered. Unlike the curry I just recommended, this vegetarian dinner doesn’t come with rice, so pick up these cups of cooked rice and—voila—you have an easy vegetarian dinner. Throw a couple of potato samosas in the oven and you’ve got yourself a meal that might even be easier than picking up the phone and ordering takeout.

Kirkland Signature Five Cheese Tortelloni

Pasta is a vegetarian classic. And rightfully so—it’s easy to cook, relatively cheap, and damn good to boot. Costco obviously has a lot of choices for us as we figure out which pasta to grab. They’ve got Kraft mac and cheese by the case or a variety pack of dried pasta. There’s nothing Costco loves more than a variety pack. Both good choices, but I’m a fan of the tortelloni. I will admit there’s a little bias because I did just adopt a kitten named Tortellini. But, c’mon, everyone loves cheese tortellini, right? Just make sure to grab some good marinara sauce to go with.

Don Lee Farms Organic Chipotle Black Bean Burger

Here’s my hot take from a meat eater who has exactly zero skin in the game: We need to bring back black bean burger patties! There’s a significant number of omnivores out there who don’t even eat red meat so why are we even trying to dupe that flavor in our veggie burgers? Costco has the right idea. They have Beyond burgers, but they also have a space in their freezers for the OG veggie burger. Let’s go back to our roots and embrace the spice-laden patties that used to be a staple on grills across the country!

Impossible Chicken Nuggets

Everyone loves the taste of chicken. It’s a staple in cultures across the globe for a reason. So don’t let the fact that you’re vegetarian get in the way of you digging into a heaping plate of chicken nuggies for dinner. Personally, I like to have a few frozen burritos on hand for the days when I really don’t feel like cooking. Which I won’t stop you from also doing. Smash two burritos in a few minutes will keep you full for a while. Costco does make it easy if you want to make a whole meal out of it though, too. That’s probably better for your mental health, anyway. You’ll need Kirkland Signature’s chunky guac, a bag of their tortilla strips, and a gargantuan tub of sour cream for this. Cook your burritos, chop them up, and add your fixings to the plate for a big, gooey, cheesy mess of ingredients that all go together for one heck of a dinner.

No one’s stopping you from getting a whole $10 cheese pizza from the Costco food court. Actually, it’s so cheap that I’ll judge you if you get your pizza elsewhere. A whole pizza the size of a car tire is the start of one hell of a night in! Swing by Costco to grab a pizza and a few double chunk chocolate cookies then sit your butt on the couch and veg out. I just wish they had a veggie dog so you could experience my favorite part of the food court.
