Lily’s Pick: Happy Egg Co. Free Range Heritage Eggs

I grew up in a VERY rural town in Maine and one of the things I miss the most is the local ingredients I could find around town: clams straight from the muddy low tide sands, wild blueberries, and my neighbor’s fresh eggs, which they would sell out of a small cooler at the end of their dirt driveway. After I moved to L.A., I quickly found out there ain’t no dirt driveways and there ain’t no fresh eggs at the corner of Western and Wilshire. That’s why I’m recommending the Free Range Heritage Eggs from Happy Egg Co. as gifts for your loved ones this holiday season. Put back the giant tin of Chicago popcorn and don’t spend $1,000 on a charcuterie board this year because these eggs are a luxury.
Happy Egg Co. has always been my go to grocery store egg, but after I came across their beautiful line of blue and brown heritage eggs, I was in huevo heaven. They remind me of the farm fresh eggs I grew up eating because of their deep orange yolks. Don’t waste them on your baked goods because they’re too pretty to be buried in a chocolate chip cookie. Keep it simple: Fry a couple up in butter and lay them up on top of your holiday tamales, scramble and eat them with a plate full of bacon, or boil for 7.5 minutes, crack, and peel, and top with salt and pepper to eat as a snack.
Gift these “local farm fresh eggs from Lily’s childhood neighbor in Maine” aka Free Range Heritage Eggs from Happy Eggs Co *wink wink* to the ones you love the most and let’s normalize giving eggs as presents for 2024—because they’re not cheap, people! In the meantime, if you live in L.A. and have chickens on the corner of Western and Wilshire, I better see you with a cooler full of eggs. Happy Holi-Eggs!
