Portillo’s Is Launching 5 New Sauces and One Is Truly Chicago

If you’re looking for a taste of Chicago beyond the Windy City (and, to be honest, when you’re there), Portillo’s has you covered. Look, I’m not saying that it serves the best Italian beef sandwiches or hot dogs around—maybe you think that, maybe you don’t, but either way I’m not touching that debate with a barge pole—but with dozens of locations around the country, it’s never too far from reach. 

However, while Portillo’s focuses on serving classic fast food, like any self-respecting chain in this here 2026, it’s not afraid to spruce up its menu. This year, it’s all about the sauces, and it’s debuting five new flavors for all of your fry, onion ring, and meat-and-bread-based needs. Here’s what it’s been cooking. 

Portillo’s New Sauces:

BBQ

Pretty much what it says on the tin, really. A smokey, sweet, and slightly tangy barbecue, ready for dippin’. 

Buttermilk Ranch

Flavored with onion, garlic, black pepper, and (we were pleased about this one) fresh herbs, this one’s gonna be good for its chicken sandwiches

Comeback Sauce

Now things are getting a bit more interesting. Portillo’s Comeback Sauce is a creamy, garlicky, paprika-spiked chicken dipping sauce. This one’s tailor-made for tenders.

Honey Mustard

Dijon and yellow mustard come together here, with honey cut with tangy lemon, and spices warming everything up. 

Giardiniera Sauce

A twist on a Chicago classic (and one that we expect to be a bit divisive). This sauce is made with Portillo’s own hot giardiniera relish, but the curveball is that it’s… creamy. Honestly, weird flex, but we’re kinda craving it already…

How Do I Sample These Sauces?

Portillo’s is offering its new sauces as sides when ordering its fries, onion rings, chicken tenders, or just as an add-on to your regular meal. However, it’s not just throwing them out there as single options: It wants you to try each one at once. Portillo’s is rolling them out in a Sauce Flight, which contains all five sauces. The Sauce Flight will cost $1.99 on its own or $0.99 when you’re getting it with your tendies. If you only want to try one, though, you can also just add them to your meal individually. 

When Are Portillo’s New Sauces Available? 

If you’re a Perks member, right now. Portillo’s new sauce options launched on January 27 for its Perks customers, and you simply have to tap the Secret Menu option when you’re ordering via its kiosk in-store. 

For the rest of ya, you’ll have to wait until February 4 before they’re available. They’ll be in Portillo’s restaurants nationwide, but bear in mind that this could be a limited run: Its Sauce Flight is only due to be around through March, and it may be a “while stocks last” situation. If you’re salivating at the thought of creamy giardiniera, then get down there from Wednesday onward.
