Just about once a month I like to hop on here and re-introduce this weekly series to our dear readers. You see, to us this series is an opportunity for us to digest (hehe, get it?) what we’ve eaten throughout the week — beyond the new product releases and taste tests — and evaluate what the best things were from it. It often ends up being an analysis of the groceries and products that we’re getting for our own enjoyment that we had seen in the wild and suspected they would be a delicious new addition into our daily routines.

It’s like a little trip down our short-term memory lane and also a bit of a practice in gratitude for the absolutely fabulous meals and snacks from our other otherwise mundane eating habits. These are the kind of things that we not only appreciated an extra dose of this week, but that we think would also be worth it for you all to try out on your next grocery run too. These are the three best things we ate this week.

Braised Beef & Wine Ravioli — Costco

Finally the days of stockpiling spinach or cheese-filled ravioli and tortellini from Costco are over. With this new addition to their product lineup, they are giving us an opportunity to rotate our filled pasta of choice with something not only densely packed with flavor, but filled with something that tastes so distinctly different than just a creamy, cheesy filling while still giving us the stuffed pasta meal we’re craving. The red wine reduction and braised beef flavors pair in a way that feels deeply celebratory of the season ahead, and, as we look to alternatives to cheesy pasta, this feels like the perfect addition to our fridge. The pasta casing itself is tender yet toothsome creating a perfectly al dente experience when cooked to the package instructions. These are a 10/10.

Norwegian Lefse — Trader Joe’s

Imagine if you took a tortilla, made it square, and made it out of potato flour instead of a wheat or maize flour. That’s basically what you get when you buy a Norwegian Lefse. In Scandinavian cultures, lefse are traditionally used as a wrap/bun for hot dogs, or “pølse” as they call them in Norway . But ever since these were released at Trader Joe’s they’ve taken on a bit of a new life. Even my born-and-raised Norwegian partner appreciates the utilization of it in different capacities that you wouldn’t normally see in Norway.

Since they are basically tortillas with a softer texture, they make an excellent wrap that is more tender and less chewy. It is more prone to breaking, but if you’re used to something like a corn tortilla, then it’s tenderness is pretty comparable. My only qualm with these are that the name “lefse” actually refers to the sweet made traditionally by taking these flatbreads, adding a thin layer of butter and cinnamon sugar, and rolling the flatbread up. The name for just the flatbread itself is “lompe.” Otherwise, the execution of these flatbreads is pretty flawless. 

illy Intenso Ground Espresso

An at-home espresso shot is admittedly a bit of a hard thing to conquer and execute well. Those who get into the at-home espresso game will often utilize the company illy to source their coffee grounds. Of course, the classic red label illy espresso is a great choice, but we recently ventured away from the Classico and into the Intenso with intrigue. As fans of the super dark and bold espresso flavor that leans heavier on the chocolate-y nutty notes of a darker roast we loved this blend. And if that sounds like a bit of you too, then we highly encourage you to try this one out too. It’s become our new favorite.
