Today, Trevor Evarts tells us about a product that’s even better than bacon, if you can possibly imagine such a thing. Trevor’s Pick: Primo Diced Pancetta
If you’re like me and you love everything about bacon then, boy, do I have the product for you. Imagine if bacon went to private school or imagine if bacon had a more successful older sibling, that’s what pancetta is. If bacon is Shrek then pancetta is Shrek 2. Both are amazing products, but the second one just has that little extra umph that keeps you coming back for more. I’m not just trying to crap all over bacon, it is one of my favorite things to eat, but pancetta is a product that can enhance your dishes so much. Pancetta is salt-cured pork belly that usually comes in cubes or in thin slices. If you just want a delicious meat product to snack on, then go get some sliced pancetta at the store. But if you want to step up your soup or pasta game, then it’s time to explore the beautiful world of cubed pancetta. I used pancetta in an episode of Mythical Kitchen in which we made our go-to weeknight pastas. I used the rendered fat from the pancetta as the base for a cream sauce and everyone that I have made this for has loved it. That means that six out of six of Trevor’s six friends recommend eating pancetta, and that’s a pretty good track record. The next time you go to the store looking for meaty snacks or some fun new salty bites to put in your dishes, pick up a pack of pancetta and enter fatty, Italian, pork belly heaven.
