Not that long ago, coffee tasted like… well, coffee. Maybe vanilla if you were feeling adventurous. Caramel if you wanted to branch out. Hazelnut? That felt downright exotic.

Now you can drink banana bread. Or s’mores. Or cinnamon rolls. Or birthday cake. Or churros.

Somewhere along the way, drinks stopped borrowing flavors from fruit and started borrowing them from the bakery display.

Dessert Has Left The Bakery

This isn’t just Starbucks doing Starbucks things. Dessert flavors have quietly spread into almost every corner of the beverage aisle.

Coffee creamers promise cinnamon rolls and birthday cake. Cold foams taste like banana bread. Protein drinks are leaning into cookies and brownies. Limited-edition coffee menus increasingly read like dessert menus.

Even flavors that were once seasonal treats (like s’mores) now appear in everything from coffee to frozen drinks before eventually spilling into other food categories. It feels like every new beverage launch starts with the same question: What dessert can we turn into a drink?

Brands Aren’t Selling Sugar

The interesting thing is that these drinks aren’t really trying to replace dessert. They’re trying to bottle the feeling of dessert.

Banana bread isn’t just banana. It’s warm, buttery, comforting, and smells like someone has been baking all afternoon. S’mores instantly make you think of summer. Cinnamon rolls feel cozy. Birthday cake tastes like a celebration before you’ve even taken the first sip.

Those flavors come with built-in memories. And that’s much easier to market than simply saying something tastes like vanilla.

Coffee Menus Are Starting to Look Like Bakery Menus

Coffee might be where this trend is most obvious.

Walk into almost any café today and the specials board doesn’t just list drinks anymore – it reads like the menu at a bakery. Banana Bread Latte. Churro Cold Brew. S’mores Mocha. Brown Butter Cookie Latte.

Some of them barely sound like beverages at all.

The espresso is almost becoming secondary. It’s just the vehicle delivering whatever nostalgic dessert flavor is having a moment.

Maybe We’re Just Looking for Comfort

I don’t think it’s a coincidence that all of these flavors have something in common. None of them are particularly sophisticated. They’re familiar.

Nobody has to explain what birthday cake tastes like. Everyone knows a cinnamon roll. Banana bread reminds people of home. S’mores remind people of summer holidays, campfires, and sticky fingers.

They’re comfort foods first and flavor profiles second. That makes them incredibly easy to sell.

So… What’s Left?

At this point, it’s almost more interesting to ask  what’s not becoming a drink. We’ve already had cookies, cakes, pastries, campfire desserts, and breakfast baked goods. I wouldn’t be surprised if someone launches a peach cobbler cold brew or tiramisu protein shake before the year is over. Maybe there already is and I honestly wouldn’t even blink.

Drinks used to borrow from the fruit bowl. Now they’re borrowing from the dessert menu. And judging by this year’s launches, brands are just getting started.
