Breakfast ideas can be tough. As someone who reverts to the same thing every day (with a bit of variation on the weekend, to spice things up), I can attest to this. It’s just too much work that early in the morning to rock the boat! Inspiration goes out the window. Instead, it’s back to toast or oatmeal.

Well, I’m now officially bored with both of those things – so I turned to everyone’s budget-appropriate friend, Aldi, for some inspiration. Using Aldi products as a starting point, here are some breakfast ideas you can put together, next time you feel you need a refresh to your morning routine when trawling through its stores.
Hash Brown Avocado Toast
This one’s for when you wanna feel a little virtuous and more than a little millennial, but you also want…y’know…crispy, oily potatoes. Grab a pack of Season’s Choice Shredded Hash Browns or Season’s Choice Hash Brown Patties, and cook them up. If you’re going for the latter, bind them together with some flour and/or an egg, so they remain one full piece. Once cooked, add some sliced avocado and a drizzle of hot honey, and – if you’re so inclined – a fried egg. I’ve already had breakfast, and I’m hungry again.
High-Protein Breakfast Burrito
Aldi’s EggLife Original Egg White Wraps are great if you want a protein-rich breakfast burrito without any gluten or carbs. Just load one up with scrambled eggs, seasoned ground turkey, and some shredded cheese (I’d also recommend throwing in some beans, too, for an extra boost of fiber). Drizzle on your favorite hot sauce, and you’re good to go.
Coconut Chia Pudding
Summer’s here, and that calls for light, yet filling, fruit-forward breakfasts. Well, in my world, anyway – and a coconut chia pudding is the perfect vehicle for fresh berries, sliced mango, and whatever else you want to pair with it. Pick up a pack of Simply Nature Chia Seeds and some Aldi Coconut Milk (you can cut this with some Friendly Farms Original Coconutmilk if you want it to be slightly thinner). Whisk the two together, add some vanilla and maple syrup, and pour the mixture into a ramekin or small bowl. Allow it to chill and set overnight before topping with fruit in the morning.
Protein Waffle Bowl
We’re back on the protein train, people! Pick up a box of Breakfast Best Buttermilk and Vanilla Protein Waffles, and cook them according to package instructions. Then, chop them into pieces, and pop them into a bowl. Layer them with Greek yogurt, some seeds or chopped nuts, and your favorite fruit. Serve, eat, enjoy.
Huevos Rancheros
One of the ultimate great breakfasts, huevos rancheros can be easily put together using Aldi finds. Grab a can of Pueblo Lindo Chopped Green Chiles, some Pueblo Lindo Corn Tortillas, and some Casa Mamita Traditional Refried Beans, as well as eggs, tomatoes, onions, and some chicken broth. Fry the tortilla before cooking the onions, tomatoes, chiles, and chicken broth together. Fry an egg, then layer the tortilla with the beans, egg, and salsa, with a sprinkle of queso fresco if you want to finish it off.
