5 Of Our Favorite Coziest, Vegan Frozen Meals

It’s already gotten a bit crisp, and definitely rainy, in some places. And whatever the weather, fall usually means we’re all busier. So as we scope out some of the coziest ready-to-eat foods at places like Costco, Sam’s Club, and TJ’s, it occurred to us this might also be a great time to see what comfy, cozy, robustly delicious vegan, frozen meals are out there this year. (We already found a bunch last year.)

Because seriously, eating conscientiously should also be as easy as heating up a premade tray of lasagna. Here are five cozy vegan meals for your plant-based Monday to Friday easy dining convenience. 

Tattooed Chef Sheet Pan Vegetables at Costco (4lbs) ― $13.61

Sheet pan veggies might not sound “cozy” or robust at first glance, but first of all, this is four pounds of the stuff―from the Tattooed Chef brand, meaning they’re not messing with seasoning, chunkiness, and variety. You get Brussels sprouts, sweet potatoes, broccoli florets, red onion, and zucchini. I don’t know about you but roasted veggie medleys are a major part of my cozy fall meals―and yeah, sometimes I’ll dabble in adding cheese―but you can keep it vegan with some rice, a blend of your own seasonings (think curry and coconut), and really whatever strikes your fancy. You’ve got 4 pounds, and some long chilly nights ahead. Best part? All the prep is done. 

Vegan Spinach & Cashew Ravioli at Trader Joe’s (8.8 oz) ― $3.99

Nothing says “cozy” like “ravioli” (they almost rhyme), and these vegan ravioli, available insanely cheaply at Trader Joe’s, don’t even try to compete with their dairy-based counterparts. They set a whole new standard for ravioli that just so happens to be vegan: the egg-free semolina pasta ravioli are provided to them by the same Italian producer who’s been in the business for over 140 years. The filling doesn’t shirk on heartiness, with sauteed spinach, cashew cheese that’s not just convincingly but ooey-gooey-sublimely creamy, and a sprinkling of breadcrumbs for what TJ’s calls “a little extra oomph” (of texture) “in each bite.” A few minutes in boiling water, maybe a vegan TJ’s pasta sauce or just a sprinkling of fresh herbs and crushed red pepper and you’ve got a cozy bowl of plant-based pasta for some shameless vegging out. 

Amy’s Frozen Vegan Gluten Free Chinese Noodles with Veggies and Cashew Cream Sauce at Target (9.5 oz) ― $6.79

Comfy, cozy, ready to eat? Chinese food. Getting it vegan can be a bit trickier, and getting it with a creamy cashew sauce is nearly impossible―unless, of course, you’re going with a tried-and-true brand like Amy’s. You’ll get organic everything, including rice pasta, broccoli, green beans, (gluten-free) tamari, tofu, onions, mushrooms, carrots, and lots of delicious Chinese seasonings. The price makes it the kind of frozen meal you might want to stock up on. Again, this being Amy’s, though, there’ll be some decent variety in vegan choices, so have a look around. Just keep those freezer doors closed!

Earth Grown Plant-Based Southwest Burrito Bowl at Aldi (10 oz) ― $3.99

The words “burrito bowl” already have us thinking about sweatpants and a good mindless movie. Not that the food has to be mindless―Earth Grown is a great, prolific, plant-based brand with tons of tasty, eclectic ready to eat options. The reason we’re homing in on on this burrito bowl is because frankly, bowls are just so delightfully easy. And they’ve got all that stuff in them―in this case, a warm base of brown rice, textured soy protein (your meat sub), tomato, black bean, chipotle, tomato, spices, bell pepper sweet corn, garlic, lemon juice, and onion. You probably won’t miss the cheese (though chances are you can find a vegan guac to thicken things up, not to mention some shredded vegan cheese). 

Kite Hill Mushroom Ricotta Ravioli at Whole Foods (9 oz) ― $9.99

It might seem a bit lazy to include two raviolis in the same vegan cozy ready-to-eat list, but hear us out: this one just sounds really, really good. Also, if you’ve ever gone meat-free, for any reason, you’ll have very quickly realized the many meaty virtues contained in the mighty mushroom. Seriously, they’re incredibly savory, texturally meaty, and buttery at the same time. And yet these ravioli are made with almond-milk based ricotta so you’ll still get that meaty mushroom filling with delicately nutty plant-based creaminess.
