Y’know, every now and again, some news comes along that makes you think that everything’s going to be alright. You could be having the worst week of your year – your life, even – and then you hear that Baileys is releasing an ice cream cake, and suddenly, the sky looks a little brighter.

That didn’t necessarily happen to me (I’ve actually had quite a nice week, in case you were wondering), but obviously, when I discovered that this ice cream cake was a real thing and not just a hallucination of mine, it was a beautiful moment. Everything We Know About the Best Cake We’ve Ever Seen
Baileys’ new Ice Cream Cake is a partnership between the beloved Irish cream brand and I Love Ice Cream Cakes (a division of Rich Products), and it represents a move towards more diversification of their products. “We’re thrilled to partner with Baileys to bring this unique ice cream cake to grocery stores nationwide,” Kim Mrowczynski, Rich Products’ Brand Marketing Manager for Ice Cream Cakes, said in a press release. “The Baileys Ice Cream cake is a strong example of Rich’s commitment to innovation and shows our dedication to offering exciting new ice cream cake flavors for our consumers.”
Exciting, it certainly is. This ice cream cake starts with Baileys-flavored ice cream that’s mixed with rich chocolate, and then adorned with a coffee-flavored icing and a bunch of chocolate shavings. Indulgent really is the watchword here, but when has Baileys ever been anything but indulgent? Importantly, too, there’s no alcohol in this cake whatsoever, so you can enjoy it in pretty much any situation.
This cake is definitely a sharing vibe: Each ice cream cake weighs in at 46 ounces and will serve approximately 10 people. We say approximately because we’re pretty ready to just get this and plough through it solo, but maybe you’re in a sharing mood.
Where Can I Find the Baileys’ Ice Cream Cake?
Right now, Walmart is leading the pack on this one: It’s available there right now. It does look as though it’ll be sold elsewhere, though, and stores like Albertsons and ShopRite are expected to stock the cake too. The fact that this is being released in spring gives us hope that it’ll be around for a while: Baileys is traditionally a winter-time drink, and we very much admire that both parties are bucking convention by dropping it when things are getting warmer. Will it have the same flavor effect when the sun’s out? Who knows – I’ve certainly never had Baileys in the summer months, so I couldn’t tell you – but I’d bet good money on it still tasting great.
