This week at Crumbl, they made a stance that summer isn’t over yet. Cue Midnight Sun by Zara Larsson and make your way over to Crumbl this week for a final glimpse at Eurosummer without ever even having to go to the airport. By the sounds of it, Crumbl is really going out of their way to honor the Swedish princess by even making an entire cookie themed around one of Sweden’s beloved candies, Bubs.

The cookie is designed to replicate the flavors and sensations of perhaps the most iconic Bubs flavors of all time, the Strawberry Vanilla. It’s sour sugar-coated and the perfect, slightly pillowy gummy texture. And, beyond popping a piece of the candy itself onto the top of the cookie, it sounds like it will not only taste good but replicate the candy’s flavors well.
The base cookie is a marbled vanilla-strawberry dough with freeze dried strawberry crushed and mixed into the dough. After baking, the cookie’s topped with swirled strawberry and vanilla mousses. Overtop of the entire cookie creation is a dusting of the sour sugar coating that the candies are known for and, of course, they had to include one of the candies themselves for garnish.
Sounds like they really committed to making this a strategic and well-designed cookie. But we here at Sporked are here to tell you for certain whether or not they were actually able to execute it well. Without further ado, this is our review.
All Our Thoughts
Pros — I guess I shouldn’t have been as surprised as I was that this cookie was actually really nice considering how much of an affinity I have for the source material. But the mousses on top were delightfully light and not cloyingly sweet. The delicate strawberry flavor was present throughout the cookie and didn’t overwhelm all the other flavors.
The best part of this cookie by far though was the commitment to integrating the sour sugar coating of the candies onto the cookie itself. It’s an unexpected twist to a cookie that makes it wonderfully interesting and actually makes you want to immediately go in for another bite (which I did, of course). And hey, I’m never gonna complain if someone gives me a Bubs to snack on, whether or not it’s on top of a cookie is irrelevant.
Cons — My biggest issue with this cookie was honestly that the dough itself didn’t really live up to what it was claiming. It wasn’t really marbled like it said it was going to be and with the idea that there was going to be freeze dried strawberries in the dough, I would’ve expected the faint strawberry flavor coming through to have been a bit more natural tasting. As always, the dough needed a touch of salt for balance because it was pretty overwhelmingly sweet on its own. Luckily, the other components in this cookie really helped balance it out.
