We Tried The Ice Cream Cake Sandwich Cookie From Crumbl

This week at Crumbl, their cookie menu is themed after what it’s biggest fans wanted. The menu was literally determined by a fan vote that led to what are apparently Crumbl’s biggest hits, all in one place. And while the menu had many interesting cookies represented this week, the Ice Cream Cake Sandwich Cookie is the one that sounded the most intriguing to us.

The thing is, the reason it is the most intriguing cookie on this menu to us isn’t actually because it sounds very good. It’s actually the fact that it sounds pretty bland and overall just kind of uninteresting. Granted, it looks adorable and delicious since it’s basically a tiny little cake made of cookies, pink frosting, and sprinkles. Ultimately though, we knew that we would have to get to the bottom of why this was such a highly demanded returning flavor. Is it unassumingly packed with flavor, or is it all about looks? Pros — Immediately when I got this cookie I understood the appeal. It is adorable. It basically just looks like a small, idyllic birthday cake if the vanilla cake was replaced with sugar cookies. Between the pink frosting and the rainbow sprinkles, it’s not only adorable, but it is charming and endearing in a way that makes you want to order it. It’s what happens after you bite it that the disappointment starts to come in. But we’ll get into that later.

For the sake of the frosting, it is a creamier taste and texture compared to their standard buttercream, and that quality is appreciated. Plus the cookie itself is one of the less sweet Crumbl sugar cookies I’ve tasted in quite some time. It’s far from perfect, but the balance provided from this being a more mildly sweet sugar cookie really came in handy through each bite.

Cons — Oh, where to begin… Unfortunately, this cookie was just hard to get through. Beyond its looks, it’s flat and an entirely one-note experience. The overall flavor just tastes like vanilla and sugar, and when you get a bite with all of the layers your tooth aches by the time you make it through the bite. While the cookie itself was more balanced in the regard that it wasn’t as overly sweet as Crumbl sugar cookies usually are, it still doesn’t really have much flavor. 

Furthermore, I wouldn’t be surprised if the icing was entirely devoid of salt, something it desperately needs if it’s only pervasive flavor is creamy vanilla. The supposed ice cream inspiration that was supposed to be represented in the frosting only comes through in its texture. Otherwise, there’s no notes of the ice cream cake this cookie was supposed to represent.
