Last week, I made a whole hullabaloo about how easy the Crumbl reviewing beat is when there’s only one new cookie. Crumbl, surely thinking of my busy schedule this week personally and no one else, decided to go a step further by releasing a menu of 100% returning recipes this time around! There’s no specific theme either: Raspberry Cheesecake, Cinnamon Roll, and this cookie all fall under the “dessert-flavored dessert” category, while White Drop and Chocolate Peanut Butter Brownie are both topped with trick-or-treat classics. (Pumpkin Chocolate Chip is just a good time with no friends to speak of–easily taking home second place in my informal ranking of this week’s lineup, in brave opposition to our own Rachel Jones.)
As a result, I did something so rare, I can’t think of another example in recent memory… I reviewed the Crumbl cookie that actually sounded the most interesting to me personally. (I know, right?) Let’s find out how Crumbl’s returning Biscoff Ice Cream cookie stacks up against their recent innovations… right before Crumbl turns the firehose of cookie creation back on yours truly with an all-new lineup next week in return for the easy fortnight.

Pros: I already have a soft spot for Crumbl’s “served chilled” lineup, so this ice cream-inspired cookie made me happy before it even reached my mouth. The brown sugar cookie is rich and sweet, while the Biscoff cookie butter buttercream (cookie buttercream? We need to standardize a name for this ASAP) delivers such a strong airplane cookie flavor that I was surprised the cookie didn’t have any Biscoff to speak of. This is the first Crumbl cookie in a long time that I completely crushed on my own–in as close to one sitting as I finish anything!
Cons: I wish the Biscoff cookie crumble were a little chunkier; this super-light sprinkling doesn’t have that classic crispy cookie texture. Larger chunks mixed into the buttercream itself rather than a dusting of superfine bits would better emulate a cookies-in-ice-cream texture. If this cookie delivered the texture of cookies & creme ice cream with the flavor of Biscoff, Crumbl might win awards for global peacekeeping.
