Costco’s Latest Prepared Food Drop Has Everyone Talking

Costco is, dare we say, on a little bit of a roll in its prepared food section. In the last month, we’ve seen some returning favorites and some new arrivals that have kept its shelves brisk and busy, with its beloved gyro kit making a reappearance just in time for the warmer months, and its brand new Beef Ragu with Gnocchi debuting to mostly positive reviews.

And now, it’s graced its patrons with another comeback kid. Costco’s Shrimp Ceviche has just dropped, and it looks set to be a lot of people’s go-to this summer. Let’s discuss.

Costco Shrimp Ceviche

The return of Costco’s Shrimp Ceviche was confirmed by @costcohotfinds over on Instagram, who spied it in the prepared food section of the store last week. Each large tray of ceviche is made with tail-off shrimp, red onion, bell peppers, and cilantro, and it comes with a couple of wedges of lime for an extra spritz of citrus. It’s currently retailing at $11.99 per pound, but the ultimate price will, naturally, vary from pack to pack: Expect to pay around $15 or so per container.

Costco first brought out its Shrimp Ceviche back in 2021, but since then, it’s been an elusive presence in its prepared food section. Although the store has stocked other ceviche products since, they’ve usually been made by other food companies, as opposed to coming under the Kirkland brand name. Costco has been on a bit of a push lately with its prepared seafood product, though (well, if its new sushi burrito is anything to go by), and the re-emergence of its Shrimp Ceviche feels very in line with its briny ambitions. 

And Is It Worth It?

Well…here’s the thing. Just because a lot of people are talking about the Shrimp Ceviche (@costcohotfinds’ comment section was hit with hundreds of responses when she dropped her video profiling it), doesn’t mean that everyone loves it. The shrimp dish has had a mixed response, with some people noting that it contains precooked shrimp and questioning the use of bell peppers, while others flag that it’s not quite as vibrant and flavorful as they’d hoped. “As a Hispanic person who grew up eating ceviche, it was a solid attempt but there was nowhere near enough lime juice. It tasted pretty bland,” said one person.

Others, though, have highlighted its freshness as a positive and raved about its flavor. It’s worth pointing out that it was a similar situation back in 2021, when the Shrimp Ceviche split opinion over on Reddit. ‘Twas ever thus.
