Oh, man, we LOVE it when it’s “new Costco item” day! And thankfully, that day comes around pretty much every other week at the moment. The big box store releases new things at a steady clip, but we’ve usually got one eye trained on its prepared food and bakery sections – and the latter’s been busy this summer. In the last few months, we’ve seen new madeleines appear, witnessed the return of the Strawberry Streusel Cheesecake, and done a taste-test of its new Pretzel Bagels (which got a solid 9/10 from us, so get ‘em while they’re hot).

And it’s not done yet. Costco has just graced us with yet another dessert, and this one’s a sharer.
Costco Lemon Blondie Dessert Bars
Costco’s latest drop, its Lemon Blondie Dessert Bars, has been spotted by @costconewdeals over on Instagram. Unlike some other Costco desserts, which can be slightly more expensive than we’d like, this one’s a pretty good deal: Each box contains 16 dessert bars and costs $8.99. As Allrecipes states, that’s about 56 cents per bar – not bad for a sweet snack.
For that amount, too, you get a lot going on in each bite. Costco’s Lemon Blondie Dessert Bars start with a sweet blondie base, and they’re then crammed with lemon filling and finished with a white chocolate drizzle. There’s the promise of sweetness, tartness, and the buttery, vanilla-y undertones of a classic blondie.
And Are They Any Good?
Well, I think it’s fair to note that reviews so far have been mixed. Mixed, I say! Over on Reddit, a thread with responses from early taste-testers has seen a few people share their gentle disappointment with these blondies, with the original poster saying that they were “a bit dry and firm for a blondie.” Another person said “I did not like the blondie texture combined with the lemon flavor – even though I love blondies and lemon bars separately.”
In the interest of balance and fairness, though, other people have been fans. “These lasted about two hours in our house.. I didn’t even get one. I think they may be a hit,” stated one happy customer, while another, in a slightly more muted response, stated that they were “pretty good.” Hey, pretty good is not bad. Not wild levels of positivity, but not bad.
So, are these worth taking the plunge on? Eh…it’s up to you. If you’re a big lemon blondie fan and want to sample everything that’s out there, $8.99 for a big box isn’t a bad deal. Maybe just make sure you have a glass of water to hand.
