Another week, another Costco prepared food item to discuss. The store’s deli section is a constant hive of activity, in the same way that an airport is…by which I mean that place never sleeps. Over the summer, we’ve seen a regular rejig of its prepared foods selection, but said rejig has mostly taken the form of Costco bringing things like its shrimp ceviche and Italian sausage and pasta back. The band has been brought back together, reunion-style.

Well, now, the band’s got a new member. Costco’s just dropped an all-new prepared meal, and you’re going to need to like cheese to enjoy it. Luckily, we really like cheese.

Costco’s New Kirkland Signature Burrata Salad with Balsamic Dressing

Last week, Costco dropped a new Burrata Salad in its deli section, and it’s already a minor hit (although its price has been receiving some criticism – more on that in a second). As @costcohotfinds showed when she spotted the salad in-store, this Mediterranean-inspired meal is a combination of salad leaves, grape tomatoes, parsley, a balsamic vinaigrette…and three burrata balls. The burrata itself looks pretty decent, and seems to have the requisite creaminess needed for it to really shine.

So far, customers have been loving Costco’s new salad, and while it’s very simple, that’s where its success seems to lie. The fact that it is so simple, though, has some people questioning why it’s so expensive. Costco’s Kirkland Signature Burrata Salad with Balsamic Dressing costs $7.99 per pound, and given the size of most containers, you’re looking at paying around $17-18 for a single container. Yes, that container is meant to serve multiple people – but for a package containing vegetables and cheese, can it really be justified? “Meat prices for a salad is always wild to me,” said one person on Reddit, just one of several who criticized how much it costs. Granted, burrata is an expensive ingredient to produce, and it’s not especially cheap even at wholesale prices (I can attest to this, having worked in a pizza restaurant for a few years that served a burrata salad – the margins on that thing were low), but it’s still a lot of money to spend on one item.

I’d Rather Make My Own At Home…

Fair enough – and judging by what’s going on here, that wouldn’t be that hard. Grab your own burrata ball (several places have some good, affordable options), a balsamic vinaigrette, and a handful of leaves and tomatoes, and go to town. Sometimes, though, you want convenience. I guess.
